Ingredients of Curried Eggs with Grilled Vegetables

  • For the Egg Curry:

    2 onions, chopped

    4 eggs, boiled and shelled

    2 Tbsp olive oil

    1 chilly, cut into small pieces

    1/2 tsp cumin powder

    1/2 tsp coriander powder

    1/2 tsp turmeric

    A hint of chilli powder or to taste

    Salt to taste


    For the Grilled Vegetables:

    100 gm mushrooms

    2 tomatoes

    Some herbs (basil, oregano, thyme)

    A pinch of salt

    Peppercorns, grounded

    2 Tbsp olive oil


    For the Salad:

    1/2 cup oil

    1 cup honey

    1/2 tsp peppercorns

    1 chilly, chopped

    1 tsp malt or white wine vinegar

    1 bowl of lettuce leaves


How to Make Curried Eggs with Grilled Vegetables

  • For the Egg Curry:

    Heat the oil in a pan and fry the onions.

    Tip in the chillies.

    Quarter the eggs.

    Add the cumin powder, coriander, turmeric, chilli powder, salt to the onions and give it a quick stir.

    Now tip in the eggs.

    Fold them in the masalas very carefully.

    Serve hot.


    For the Grilled Vegetables:

    Slice the tomatoes.

    Place the tomatoes and the mushrooms in a flat grilling dish

    Sprinkle the herbs, peppercorns an salt over the veggies.

    Drizzle some olive oil. Now place this under the grill for about 10-15 minutes.


    For the Salad:

    Add the oil, honey, peppercorns, chillies and mix together.

    Add the vinegar to it.

    Add this dressing to the lettuce leafs
